Paw Eh, 31, was arrested at her Dallas home at the weekend and charged with attempted capital murder.
According to police documents, Eh force-fed a spoonful of the poison to the four-year-old while her two other children, aged 12 and seven, watched.
At one point she slapped the child across the face as he resisted, the 12-year-old told investigators.
Police said Eh was unsuccessful in her attempts to force the other two children to ingest the poison.
The 12-year-old, who reportedly ran to her grandmother's home, told police her mother said she planned to kill them and then herself.
According to Sky News, the seven-year-old boy said his mother wanted "to kill us with poison powder that kills ants and stuff", according an arrest warrant.
The four-year-old was taken to hospital, where he was in stable condition on Monday.
Eh was ordered to be held in Dallas County jail on a $500,000 (£324,000) bond.
